Product Description
Azure Market Organics Spanish Brown Lentils are a staple legume for every household. This Spanish brown variety is a bit firmer than others and they hold their shape well in cooking. Known for their high protein and fiber content, lentils are packed with iron, zinc, folate, potassium, and magnesium. Lentils are a versatile and quick-cooking, highly nutritious food. They do not need to be soaked prior to cooking, and are ready in under 20 minutes, making them a great foundation for a quick and nutritious weekday meal. They are delicious in hearty soups and added to salads, and make a satisfying stuffing for poultry, peppers, or squashes. They are also used for sprouting! Try using our Spanish brown lentils for making seasoned lentil burgers, lentil sloppy joes, or lentil salad with goat cheese.
These legumes have been cultivated since Biblical times, and the Spanish brown variety was common in Spain's Pyrenees region.
Fun fact: The name lentil comes from the Latin word for "lens, " referring to the disc-shape of the legume.

Cook using 3 cups of liquid (water, or stock of your choice) to 1 cup of dry lentils. Be sure to use a large enough saucepan as the lentils will double, or triple in size. Bring to a boil, cover tightly, reduce heat and simmer until they are tender. Cook time for whole lentils is typically 15-20 minutes.

One of my favorite lentils. They cook up so soft. The flavor is great. I add them into my baking for pancakes, biscuits, and reheat them for lunch or dinner. Right now, day two of sprouting them in a mason jar.
