Not sure why I haven't known about this for the past several years. No need for special pizza flour or bread flour with this available. Has totally changed by pizza and breadstick game.

Standard all-purpose flour is incredibly cheap, but if you're making bread in a bread machine - most experts advise on using special bread flour, at roughly six times the cost (compared to regular flour in bulk). Alternatively, just use regular flour with a teaspoon of this amazing stuff mixed in. Viola! To be honest, you can often get away with using regular flour without any added wheat gluten, but to be on the safe side I like to add gluten to make sure the dough rises sufficiently, especially if I'm using whole wheat flour or I'm throwing in seeds, nuts, raisins, date slices, etc.
