I have never seen kneaded flour turning black in 3 to 4 hours when refrigerated right away. Bought five of these and all doing same thing. Not happy with the results. The pictures are after two hours of kneaded flour refrigerated and never left out. After four hours it turns really black and blue and not so good smell I had to throw away Everytime.

I could not find it in the stores. I use it for baking. A great alternative to tan wheat flour. It is a staple in my pantry.

I use this to feed my sourdough starter and will make a dough using 1/3 this flour, and 2/3 my preferred organic white bread flour, with 2.5 salt at 75 total dough hydration.Adds such a nice nuttier, more wholesome flavor to my sourdough. Definitely recommend, and I think I prefer this over the normal whole wheat flour from this brand.
