Got the bag of flour a week ago and have made free form bread loaves and rolls.The bread was made with a basic yeast dough recipe using water with instant dry milk and oil, and not only had a great taste, but also held it's shape. The bread loaves rose perfectly with a very good final oven spring rise to finish. They developed a great texture being fluffy inside and chewy outside.The rolls were made with a richer dough using whole milk, just enough water to dissolve the yeast and butter. It's a recipe that I've used often that has a higher hydration than the bread dough. I formed over size hamburger buns for 1/2 lb grilled hamburgers, some hot dog buns, and some regular rolls. They also held their shape nicely, even with being a softer dough. Nice oven spring, great texture, and they tasted wonderful.I don't think I'm going to get away with store bought rolls ever again.I find that the flour is as good as, if not better than, the supermarket King Arthur Bread flour in the blue bag.
