Product Description
Food-grade calcium hydroxide is an inorganic compound with the chemical formula Ca(OH)2. It has many common names, including hydrated lime, slack lime, pickling lime and "Cal" in Spanish.
Cal is commonly used in the production of corn tortillas. When you soak the corn in calcium hydroxide, a highly alkaline compound, it significantly increases the bioavailability of niacin in the corn, helps bind the masa together, and makes the tortillas tastier and easier to digest. It's used in a similar fashion when making hominy grits.
Calcium hydroxide is also frequently used in the pickling process to cure and crisp cucumbers for the best pickles ever. In home brewing, it's used as an acidity/pH adjustment tool. It is the most common ingredient in antacids, and it's even known as an "alternative" insecticide, as most crawling insects are killed by its touch, including ticks, fleas, beetles and grubs.

This was the best price for 50 lb bags of food grade pickling lime that I could find - by far. It comes in paper sacks, like concrete is packaged. My only complaint is that one of the bags was not sealed well and I lost a small amount (couple of ounces tops) getting it home.
