Khorasan wheat is a unique ancient grain with a slightly sweet, buttery flavor that makes a palate-pleasing pasta! Higher in antioxidants than salmon and blueberries, this highly digestible grain is safe for 70% of people who cannot eat wheat, thanks to the unique type of gluten it contains. Khorasan also has 30% more protein and is richer in potassium, magnesium, zinc, and vitamin E than standard wheat. This type of grain was rediscovered in Egyptian tombs, and remains in its original form from five thousand years ago, without hybridization or genetic modification.
Radiatori refers to the shape of this pasta. It means "little radiator" and it is the best shape for holding sauce. It's also really cute and fun to eat.

Directions
Bring 4-5 quarts of cold water to a boil. Add salt if desired. Cook Pasta for 6 minutes, stirring occasionally. Taste until preferred level of al dente texture is reached. Drain pasta.

I bought the khorasan shells first and found them too thick. These, with all their ridges don't seem so. They are delicious, and with far more nutrition than eve whole wheat pasta. Ordered a small bag to try them, this next order I'm getting 10 pounds.
