We've been growing rice for four generations, since 1937, and we're excited to expand our farming to now include organic quinoa. Antique White Quinoa matures in the field, and turns to shades of fiery red and orange. The plant produces a soft, off-white seed that is mildly sweet to the taste and cooks up fluffy and soft in 15 minutes. It makes a great meal or side dish, or can be used as a base to create your own special recipes.
Since the 1960s, Lundberg Family Farms has been selling their products directly to stores and consumers. With more than 100 healthful products, all their rice is non-GMO and 70 percent of their products are Certified Organic.
Lundberg is also protecting the environment for future generations as a leader in organic farming, eco-farming, conservation and renewable energy. New to Azure this month are the Organic Honey Nut Rice Cakes, Organic Antique White Quinoa and Organic Tri-Colored Quinoa.

All of Lundberg's rice cakes are made from organic brown rice, and Honey Nut delivers the same crunch with a sweet, nutty flavor. Grown on the Pacific Coast in collaboration with farmers who share the same values, the Antique White Quinoa is a soft, off-white seed and mildly sweet. The Tri-Colored Quinoa includes white, brown, red, and black seeds, creating its own unique texture and a savory, nutty flavor. Both varieties cook up fluffy and soft in 15 minutes. Use it as a meal or side dish, or as an addition to your own special recipes.
COOKING INSTRUCTIONS
*If the quinoa is too firm at the end of cooking, it may be necessary to add 1-2 Tbsp. liquid and cook longer.
**Quinoa can be prepared in a rice cooker following the same quinoa to water ratios as above.

Directions
COOKING INSTRUCTIONS
- In a fine mesh sieve (strainer), thoroughly rinse and drain 1 cup of quinoa under cold water until the water runs clear.
- Place quinoa in a medium saucepan with 1 ¼ cups water or broth and bring to a fast simmer.
- Cover with a tight-fitting lid. Reduce heat to maintain a low simmer and cook for 15 minutes.
- Remove from heat (keep covered) and steam for 5 minutes. Fluff with a fork and serve.
