Michigan family orchard Montmorency Tart Cherries reduced to a tangy sweet syrup of 68 Brix. Beneficial antioxidants include melatonin, kaempferol, isoqueritrin, perillyl alcohol, quercetin, ellagic acid, and 2.0 mg of anthocyanins per 1 fl. oz. serving. Reconstitute to taste, 6 or 7 to 1. For beverages, smoothies, sauces, salad dressings, desserts, pastries, baked goods, pancakes, and waffles. Try adding it to any tea. A delicious 'cherry pie' flavor delights and soothes.
The cherries in Eden Organic Cherry Concentrate are grown on family owned orchards on the shores of the Great Lakes, an ideal tree fruit producing area because of the seasonal lake effect. The orchards are tended by those committed to cleansing the environment and producing the safest most nourishing food.
After harvesting the cherries are washed and quick frozen. This process allows a larger percentage of juice to be extracted from the cherries. After thawing the cherries are slowly pressed to extract the juice and then filtered. Using a three step evaporation process the juice is run through steam jacketed small tubes and heated to reduce the water content and concentrate the cherry essence into a 68 Brix syrup. Brix is a measurement of the natural sugar content in the concentrate. The concentrate is then bottled and sealed to preserve freshness, flavor, valuable nutrients, and to ensure a shelf stable product.
Unlike most juice concentrates Eden Organic Cherry Concentrate is prepared without artificial or refined sugars. Our concentrate is pure, simple and delicious. The Montmorency is traditionally known as the 'pie cherry' and the 'healing cherry'. Where this cherry variety has been grown for generations, the locals attest to its abilities. A study at Michigan State University found the antioxidants anthocyanins and their anlyon cyanidin compounds in the pigment of the Montmorency cherry. They also found kaempferol, isoqueritrin, and quercetin. Research conducted at Brunswick Laboratories in Massachusetts and the Hollings Cancer Institute at the Medical University of South Carolina found that Montmorency cherries contain ellagic acid, a naturally occurring plant phenolic. Other compounds of note found in Montmorency cherries are perillyl alcohol and melatonin. Dr. Russell Reiter, of the University of Texas Health Science Center, said "We were surprised at how much melatonin was in cherries, specifically the Montmorency variety." According to research melatonin is a most potent antioxidant, even more so than vitamins C, E and A; it is soluble in both fat and water and can enter cells that many vitamins cannot.
Eden Organic Cherry Concentrate is low in sodium, fat free, and contains 2.0 mg anthocyanins (an antioxidant) per 1 fluid ounce serving. It is easy to use, simply add to tea, water or sparkling water when making punch. Delightful and delicious when used in making smoothies, fruit aspics (kanten), desserts, pastries, sweet and sour sauces, glazes and confectionaries. For beverages place 1 to 2 tablespoons of Eden Organic Cherry Concentrate in a 6 to 8 ounce glass of any Eden Organic Tea, Eden Organic Apple Juice, Edensoy or water. In baking use it as a replacement for part of the liquid measurement or liquid sweeteners called for in the recipe. To create ambrosial waffle and pancake syrup dilute with 50 percent maple syrup.
Eden Organic Cherry Concentrate can be stored in the refrigerator, tightly sealed, for up to three months after opening or stored in the freezer for up to two years before opening.
