Product Description
Teff, Brown. The Ancient Grain of Ethiopia.
Teff is a delicious grain with high quality complex carbohydrates, proteins, minerals and fiber. Teff grain can be eaten as cereal or polenta. Brown Teff is rich in flavor with a subtle nutty aftertaste. Ivory Teff is milder in taste, but equally nutritious.
Tofu Vegetable Quiche
Serves 6
Preheat oven to 350F
Boil water and add teff grain plus a pinch of sea salt. Simmer for 15 minutes uncovered or until all the water is absorbed. Pour cooked teff into the bottom of a casserole dish or large pie pan.
In a large bowl mix together the tofu, vinegar and herbs, adjusting the seasoning to your taste.
Heat olive oil in a saute pan over medium high heat. Add garlic and vegetables; cook until they turn their peak color. Add to tofu mixture and stir to blend. Pour the vegetable tofu mixture into the teff grain crust. Bake for 10 minutes or until the tofu turns a light brown.

The grain is cooked very simply. Bring three cups of water to a boil, add one cup of Teff, cover and simmer for 15-20 minutes or until the water is absorbed. Toward end of cooking stir occasionally.
