"Growing up in the Mediterranean, I got a big amount of raw food products - in particular nuts, " he said. "There was always a bowl of nuts all over the place at my parent's house."
It was that environment that inspired Artisana Nut Butters. Santiago adds nothing to his almond butter: no oil, sugar, preservatives or flavorings. At Artisana they use only 100% certified organic California almonds and they are adamant about keeping the product raw.
"We are very concerned about keeping our product at the lowest possible temperature. Because if you raise the temperature, you'll change the nutritional quality and the flavor, " Santiago said.
There is no regulatory definition of what's considered raw, but truly raw food products must not be exposed to temperatures higher than about 115 degrees so that proteins, minerals and other molecules are not altered. It is most common to find roasted almond butters, which typically have almonds that have undergone the dry-roasting process of more than 200 degrees.
Almond butter is rich in protein, providing 6 to 8 grams per 2 tablespoons. (A quarter-cup of almonds contains 7.6g of protein, more protein than the typical egg.) Almonds are rich in healthy fats, specifically monounsaturated fats. They are an excellent source of fiber. They are rich in vitamins, such as vitamin E and B vitamins, and minerals such as manganese, magnesium, phosphorus, copper, iron and calcium.
The raw food movement is very popular now, but it wasn't 10 years ago when Santiago started Artisana.
"I landed in Berkley, California, from Spain. In Berkley, there was a strong movement advocating for organic agriculture. It was big. So we support small, organic farms and as we say, the food is alive."
Refrigeration is not necessary.

I love it, wish it weren't so expensive; it's the only Raw Almond butter out there for the best price. Also, wish there were larger sizes.

This may be a little price but then it is the best almond butter around. I have tried many other brands and this is the most flavorful. It is nice and thick and easy to spread. The glass jars are a plus and keep it very fresh.
