Ceylon cinnamon comes from an evergreen tree found in Sri Lanka. The inner bark of the tree is ground up to make powdered cinnamon, a popular spice commonly used in pies, bread, cookies, and much more. Ceylon cinnamon is slightly sweeter and more refined than other cinnamon varieties. Cinnamon is one of the most beneficial spices on Earth, having antioxidant, anti-inflammatory, antidiabetic, antimicrobial, immunity-boosting, cancer- and heart disease-protecting abilities. Starwest's Ceylon cinnamon is also known as "true" cinnamon.

I just got some of this Ceylon because I've read it is so much better than the others. The quality and price is great - but I'm not sure it's for me. It has a slightly different flavor than the stuff I get from Costco - and I think I prefer the stuff I'm used to. It's a personal preference - nothing to do with the cinnamon itself
