Clearjel (Cook Type) is a modified cornstarch used by many commercial bakers in fruit pie fillings. This cornstarch works well with acidic ingredients and tolerates high temperatures. Use Clearjel if you're canning homemade pie fillings, since it doesn't begin thickening until the liquid begins to cool.

Product is great! Service was great except for one thing. This item is not manufactured with a plastic lining in the bagging of the starch. My package was delivered in the rain. The shipping box was not waterproofed. Although the rainwater had entered the box, it had not soaked all the way through the bag to the starch.
