If you are from the South and love to eat grits, prepare to have your mind blown from this unexpected serendipity of an old dish in a brand new way! If you are from the North and not privy to the idea of lye soaked gmo corn adorning the side of your breakfast plate, not to worry. These single ingredient and minimally processed ancient grain grits take the southern staple to a whole new level. I made mine with a little less water to give a cous cous like consistency. It's perfect alongside eggs, sausage gravy, in my beef broth soup or just eaten plain with a little butter, salt and pepper. What's really cool is that it can be made a little creamier by simply adding more water and served as a hot porridge with berries, cream, cinnamon, maple syrup or whatever else your imagination can conjure. I can also eat these without my normal sensitivity to wheat gluten. It's like having an entire food category back on my plate. The fact that it is grown certified organic as well as regenerative and comes from a single farm in Montana means that it can be eaten with a clear conscience knowing that it is not only highly beneficial to my health, but also to the earths environment.
