I didn't know I could love a pan so much! So far I've made crepes, omelets (both open-face and folded), and quesadillas. Everything comes out beautifully. I almost returned the pan, because my lids don't quite fit, the short sides limit its usefulness for sauting, and it was smaller than I expected. But what it does, it does so well, with quick, even heating and super quick cleanup (especially since there are no rivets for items to stick to, but also because no food pieces stay in the pan when you remove the food, not even melted cheese). And the smallish size is deceiving; I've made up to 5-egg, folded omelets so far with great results. The heating is so even that there is no uncooked egg on top when the rest of the omelet is done.I highly recommend this superior quality pan. What I thought would be a niche product has become one of my most-used kitchen items.
