Dough Temp: 80 F, Fermentation: 45 Minutes, Make-Up: Divide Or Strip Dough, Give 15 Minutes Floor Time Then Make-Up. Proof: Give 3/4 Proof With Just Enough Moisture To Prevent Crusting. Fry Temp: 375 F. Using Instant Yeast: Large Batch: 50 Lb. Raised Donut Mix, 24 Lb. Water 48% (Variable), 12 Oz.
