Bitter from too much chili powder. Bad aftertaste it did not used to have.Needs more tomatoes, more onions, more cumin and way less chili powder. Quick fix?Throw a whole chopped onion in a pound of ground beef cook until well done , add two 28 ounce cans of diced tomatoes one teaspoon of ground cumin and one teaspoon of Zatarains Ground cayenne.Add a can of drained yellow corn if you like a chipolte style chili.Then add in this can of chili. Remember chili scorches easy so watch it close or use a double boiler.
