Put dry mix in large mixing bowl (preferably use a stand mixer).3. Add eggs, oil, cider vinegar, yeast-water mixture.4. With mixer on low speed, blend all ingredients until smooth. Turn mixer to medium and beat 15 seconds or until mixture thickens slightly. Pour into generously greased 9 x 5-inch nonstick pan. Smooth top of dough with wet spatula.5. Cover pan with plastic wrap and put in warm place (75 degrees to 80 degrees F) to rise for about 40 to 45 minutes or until dough is level with top of pan. Preheat oven to 375degrees F.6. Bake 60 to 65 minutes or until internal temperature of bread reaches 205 degrees F, covering bread with foil after it starts to brown. Remove pan from oven and cool bread in pan for 5 minutes. Would be wonderful without the caraway. Crumbles easily as most gluten free bread does but toasting it helps some. Definitely a savory bread. Don't think it would be good for French Toast

I love the taste of this bread I love it for sandwiches but you need to use it quickly because it dries up even after being refrigerated For a few daysthe next time I make it I'm going to slice it and freeze it I think that'll make better sandwiches and toast it when I need it

My husband loves this bread. He has been uten freevfor several years and we used to be able to find it in stores but it was discontinued. It was great to find it online.

I love this bread!!! It's taste is similar to pumpernickel. It's delicious warm with a smear of butter or cream cheese (or goat cheese.) I usually toast it lightly so it stays firm. It's great for a gluten free Rueben sandwich.It freezes well if you're not going to eat it within a couple of days. I wrap each slice in wax paper before freezing.

I followed the provided bread machine directions but reduced the water by 1 TBSP. for my old SKG machine. I experimented. I kicked it up a notch by adding 1/4 tsp. Ground Allspice, 1 tsp. Brown Sugar, 1/2 tsp. Fennel Seeds, 1/2 tsp. Poppy Seeds, 1/4 tsp. Ground Ginger, 1 TBSP. Currants, 1 TBSP. GERB'S Super 7 Seed Mix, and 1 TBSP. Sprouted Pumpkin Seeds. BAM! Flavor is fantastic like very expensive dark rye seeded bread think Reuben Sandwich.Allow the loaf to cool covered overnight for texture and flavor to develop. My finished loaf weighed 2.5, the crumb is soft and the crust is crunchy. Keep your bags of mix fresh in the fridge.

I use this in my bread maker on the gluten-free cycle and get a great loaf every time. Add some Italian seasoning for a great dipping bread with olive oil and rosemary.

PREPARATION INSTRUCTIONS:

WHAT YOU NEED
  • 3 3/4 cups (20 ozs.) dry mix
  • 1 packet Active Dry Yeast
  • 1 3/4 cups water
  • 1/4 cup oil
  • 2 eggs
  • 1 tsp cider vinegar

BAKING INSTRUCTIONS BY HAND

1. Dissolve 1 packet of yeast in 1 3/4 cups warm (110 degrees F) water and let stand for 5 minutes to foam. Have all ingredients at room temperature.

2. Put dry mix in large mixing bowl (preferably use a stand mixer).

3. Add eggs, oil, cider vinegar, yeast-water mixture.

4. With mixer on low speed, blend all ingredients until smooth. Turn mixer to medium and beat 15 seconds or until mixture thickens slightly. Pour into generously greased 9 x 5-inch nonstick pan. Smooth top of dough with wet spatula.

5. Cover pan with plastic wrap and put in warm place (75 degrees to 80 degrees F) to rise for about 40 to 45 minutes or until dough is level with top of pan. Preheat oven to 375degrees F.
