But what exactly is Sprouted Rice Flour? It is Organic short-grain brown rice that has been soaked in warm water until a sprout just starts to grow. At that point, the grain is at its peak of nutrition, and the sprouting process is stopped. It is then solar-dried and roasted to achieve the correct moisture content before being milled into a fine baking flour. And, that is all. Mother Nature has done her part to create an exceptionally nutritious and flavorful whole-grain flour.

I have been using this for year's. I like that it is sprouted and it is easily combined with other flours for GF baking. Favorite use is for making cheese sauces and gravy.
